Very Berry Cheesecake

Have I ever mentioned how much I love Wildtree?  Ok, I probably have.  And if you've ever been over to my house for a meal, chances are I've cooked with it for you too.  I use it on/in almost every meal everyday.  Yes, it's that good.  You already know that we try to eat only an organic and non-gmo diet, so of course these are perfect for our dietary needs.  The best part about them is that they taste GOOD too!  I first found out about Wildtree at one of our local farmers markets back in 2013.  They were sampling some of the fresh tomatoes from a local farm with the Rancher's Steak Rub and some of the grapeseed oil.  I was instantly in love!  I bought a jar of the steak rub and did a little researching online about the company.  I found out that most of their items were organic and if they weren't yet organic, most of the ingredients in them were.  The products are all made in a facility that is 100% peanut-free as are all the products, 100% MSG-free, no additives, no preservatives, no artificial colors, no trans fats, no high fructose corn syrup, low in sodium and sugar, low in saturated fats, no chemical processing and non-gmo.  Most recently, the facility has also become a certified organic facility and many products are now certified gluten free.  I love that I can feel safe knowing what is in the ingredients and that there is something for everyone.  I can also rest easy knowing that if I'm entertaining, there are very few things that I have to worry about as far as food allergies go.
After doing my research into the company, I went back to the farmers market the next week and signed up to become a rep.  As a stay at home mom, I figured this would be a good way to earn a few extra dollars, or at least some free groceries with food that I really loved.  And the rest, as they say is, is history.  
Today I'd like to share a simple recipe with you.  It reminds me of spring and summer and it is SO simple to make.  (Did I also mention how easy and simple everything is to cook with as well?  I have numerous friends who literally, DO NOT cook, and I have had them make plenty of meals using Wildtree freezer meals, and they love them!  But I digress...)  This recipe is great for a light dessert on a hot day, or if you're in a pinch and need to make something for a pot luck.  Or if you just feel like having some dessert (hey, who doesn't?).  This recipe took me all of about 15-20min to make and my kiddos were even able to help me.  So here is goes, my yummy cheesecake recipe using the Very Berry Cheesecake blend from Wildtree:

8 oz organic cream cheese, softened
8 oz organic whipping cream
1-2 tsp organic sugar (optional)
1 pre-made organic graham cracker pie crust or 1 box organic graham crackers & a tbsp or two of organic butter, melted
1 cup organic berries (your choice)
2 tbsp Wildtree Very Berry Cheesecake mix (purchase here) 

If you are not using a pre-made pie crust, take the graham crackers (about 8-10 full crackers) and mix them in a food processor.  Melt the butter and mix with the graham cracker crumbs.  Poor into a pie tin or glass and form your crust.  Next, using a hand mixer, whip the whipping cream until soft peaks are formed.  Add in the softened cream cheese, Very Berry Cheesecake mix, and optional sugar and mix together thoroughly.  Pour mixture into the pie crust, top with berries and refrigerate until ready to serve.  

Easy, right?  If you're a fan of the other cheesecake mixes, you can also substitute those for the berry mix as well.  The Lemon Lime cheesecake mix is fabulous with a shredded coconut topping and a little lemon & lime zest.  The Chocolate Pumpkin cheesecake mix is also great with some chocolate chips, chocolate shavings, or melted chocolate drizzled on top as well.  When I made the pumpkin recipe, I also added in a few tablespoons of pumpkin as well (since I had some on hand from another recipe).  There are so many ways to customize these recipes!
I hope you enjoy this recipe as much as I do!  As you can see, I've made this on several occasions.  I'm not much of a baker (I'm a much better cook), so these types of recipes are perfect for me!  And everyone loves them!

I have been craving for something sweet for the longest time and now I see this picture. It's heartbreaking not being able to find ways to make or purchase one as of the moment. I guess I will have to be contented as of the moment just looking at pictures. I used to eat this everyday when I am working in a hotel. It's very expensive where I am working before. I didn't know it's very easy to make if you will just have all the right tools and ingredients. I wouldn't want to take any other people's jobs though, for now I just want to buy a slice.

Great. Now I am really craving for cheesecake. I have been wanting to get hold of a plateful since last week. Unfortunately I never really had enough time to stand up from where I am situated. I can't stay away from my computer even for just a few hours. I am also watching my five year old son. I can't bring him outside because it will be very difficult to do it without a car. My car has been acting up lately and it needed to be brought for repair. I really just don't have the time and right now all I want is a berry cheesecake.
